We have purchased from this produce r previously, But a different farm: Los Caballitos. Santa Paula is located densely inland and further west than Guats more famous region Huehuetenango.
This is also a different varietal, El Cerro and Caballitos were Bourbon, this is Red Catuai, a varietal we see more commonly down south in Brazil.
This farm is reasonably large at 57 hectares, Compared to say tiny lil El Cerro (our other Guat). It has produced a uniformly high quality acidity, expect Bright (but not sour) Lime, Good Rich brown sugar and medium body on the Palette.
This is a natural Process so highly recommend purchasing El Cerro and Santa Paula as a package to taste the different processes side by side.
