Callum Jubb has been making coffee for seven years, running both espresso bars and coffee shops. He’s overseen coffee quality at venues such as; Clement coffee by St Ali, to Brisbanes’s very own Blackstar coffee, Callum has a wealth of on bar coffee experience, as well as a diverse portfolio of competition experience having competed in both Cup Tasters and 6 Barista competitions. A Regular appearance in ASCA National semi finals, and currently Queensland’s Regional Cup Tasters Champion. When it comes to getting barista training it’s important to choose someone that is not only running a successful business, but has a wealth of past experiences to draw upon - with Callum you have just that.

Blue Sky runs a number of training courses both onsite at partners cafes and also at our own training space. The basic course leads into secondary advanced courses building upon your foundational knowledge, the courses themselves are open and easygoing to accommodate questions and facilitate faster learning by providing ample time to practice with Callum providing feedback.

Barista Basics

Building a foundation for working baristas, this course will bring people with little to no coffee experience up to speed and get students making exceptional coffee. We shall explore the use of; dose, time and yield to create a balanced espresso and the interaction between milk and coffee, emphasising coffee flavours within milk beverages, and workflow practices on a busy bar. Barista basics will get you making cafe quality coffee… fast. Additional components focus on troubleshooting and solving issues such as; humidity, airflow, and the affects of moisture on your grinder.

Duration: 2 hours

Outcomes: Coffee station setup, creating balanced coffee recipes, cleaning and maintaining equipment and creating exceptional coffee under pressure.

 

Good coffee can be made easily with any gear, irrespective of training and pallate if you’ve learnt the scientific principles behind brewing. Remember that in amongst all the industry hype and noise, no matter what brewing method and coffee you have at hand all thats really happening coffee particles being dissolved in water until it reaches a point deemed as enjoyable and tasty.

Latte Art

For many people, latte art is a key indicator of a knowledgeable coffee loving workforce. It is essential that every person wanting to take their coffee making to the next level learns how to pour basic patterns. However, consistently good milk texture is more than just aesthetics - it is a principal component in specialty coffee’s most popular beverage. In this module you will explore latte art in all its glory, deconstructing techniques to make consistently beautiful drinks under pressure.

Duration: 2 hours

Outcomes: Understanding milk texture, how it is achieved and how to maintain consistently good milk to ensure repeatable patterns. How to pour basic patterns, building complexity into a pattern and achieving better contrast. MULTI COURSE MODULE: An advanced latte art course can be added, after doing the basic module.

Filter Coffee

Demystifing the beloved filter coffee, in this course we explore basic extraction principles such as; grind size, brew ratios and temperature controls. Building on the basics of; immersion brewing and pour over best practices. A cafe workflow approach will cover; water composition, batch brewing, and cafe pour over methods such as - v60, chemex and french press.

Duration: 2 hours

Outcomes: Pour over coffee proficiency, cafe brewing workflow, understanding the importance of water, and the ability to get the best from your single origins as a filter beverage. MULTI MODULE COURSE: An advanced Filter Coffee course can be booked, after the basics course is completed.

Home Barista

Sometimes even tried and tested processes can be improved upon. Making coffee at home is perhaps the place where coffee can shine the most, because more often than not it’s you making it for yourself. Tailoring specific work practices to your equipment and coffee preferences, we will provide you with all the knowledge you need to have the best quality coffee service in your own home.

Duration: 1 Hour

Outcomes: Specific outlines of your own, we shall help you create something you can recreate at home.

Coffee Cupping

A coffee degustation focused primarily on breaking down flavours found within the cup. We brew a number of filter coffees from varying origins, before examining how and why they are different from one another by examining the terrior and process involved. Next we compare there similarities with a range of fruits and chocolates. This course is curated by Queensland’s ASCA regional cup tasters champion- Callum Jubb. All coffee is included along with an additional tasty fruit and chocolate platter. This course is ideal for corporate team building events, or a group of mates wanting to explore coffee.

Duration: 1 hour

Outcomes: A greater understanding of coffees many nuanced complexities from tactile sensations like mouthfeel, to flavours and tasting notes.
