Sabio Coffee consists of 5 farms located within the intersection of three reserves.

The lots are a wide range of Blenders (which we have enjoyed immensely in our Midnight Oil) alongside top shelf experimental lots. These range from selection of varietals suited to Nicaragua’s growing conditions to the processing itself being more technical- Such as this carbonic Maceration Lot.

Fermented in an airtight Anaerobic environment without oxygen this has allowed greater quantities of Glucose and sucrose to permeate the fruit.

Expect a high quality tactile experience with a velvety, full Mouthfeel and tasting notes of Mandarin, Vanilla, Caramelized Banana, Raspberry and Blackberry.
